2 cups uncooked white rice
3/4 cup mayonnaise (lite o.k., not fat-free)
1 can LeSeur green peas, drained
2 teaspoons salt
1/2 cup minced onion
1 teaspoon pepper
1 4 oz. can sliced mushrooms, drained
2 tablespoons lemon juice
1 1/2 cups chopped celery
1/4 teaspoon rosemary
Cook rice according to package directions (omit salt). chill. Combine vegetables, then add to rice, tossing until well mixed. Mix remaining ingredients together until smooth and add to rice/vegetables.
Chill well.
